Running a restaurant isn't an easy feat.

The business comes with high overhead costs and is particularly vulnerable to financial conditions and trends.

Restaurant operator, Kerry Coote is acutely aware of this reality but isn't thwarted by the challenges.

She instead remains energized by the diversity and relevance of her offerings at Living Foods and Juices, having opened the bistro less than a year ago.

“Running a restaurant is tough, but I am fuelled by a vision to share the bountiful benefits of a plant-based diet with the public,” Coote said.

Living Food Juices offers a wide array of plant-based dishes, gluten-free desserts, herbal teas, natural smoothies and juices from a charming bistro based in Lane Plaza in Kingston.

Coote said she has, for the most part, seen strong interest among consumers.

“A lot of people are now understanding the value of investing in their physical and spiritual wellbeing so that new level of consciousness among consumers has helped,” she said.
